I Am... Caramelized Pork Taco Recipe
I'm obsessed with DIY dinners. You know the kind: your friend invites you over for a nice sit-down dinner. You're expecting something plated, maybe a fancy pasta or a steak. Then they whip out the grill and all of a sudden you're doing Korean BBQ. Or maybe they have a takoyaki maker and everyone around you is expertly making perfect ball-shaped food. I am totally that friend. If you're invited to dinner at my place, there's a good chance you'll be making (or at least assembling) your own food.

Rice Krispie treats bring me straight back to childhood. There were one of the first things I made in the kitchen. I remember bringing a rice krispie treat home (my daycare teacher did a lesson on measuring) and I was so proud. I thought it was the greatest thing I ever did. It was neon-greenness and covered in the copious amounts of rainbow sprinkles. It was beautiful!

I'm in Summerland, BC for a wedding this weekend (congrats Klaus + Marie!) and it's gorgeous, but not as summery as I was expecting! It's totally reminding me that I should eat as many summer salads as I can, so I rounded up ALL the summer salads that I need to eat before fall creeps in. Also, true story, there are no doughnuteries in Summerland. I did a google search and there were no doughnuts to be found. So, I did the next best thing and stared at these panda doughnuts from Japan.

Teriyaki chicken used to be the only thing I ate at Japanese restaurants. My dad tried to get me to eat sashimi, but as a 7-year-old, raw fish kind of grossed me out. I got over that pretty quickly though and raw fish is now one of my favourite foods. I still, however, hold a soft spot in my heart for chicken teriyaki. Crispy chicken skin, glossy sweet sauce and fluffy white rice – there's a comfort food meal right there.

Squid ink is kind of a weird ingredient - jet-black, inky and distinctively rich and briny. It pairs well with, you guessed it, seafood. Last year, while traveling through Europe, I saw it everywhere: in pasta, in rice and even in bread. Of course we tried squid ink everything. I even had a chance to cook with it myself – I made a quick squid ink pasta with fresh squid and I've been dreaming of it ever since.

I used to LOVE eating canned peaches. The syrupy sweetness, the strange canned mealy texture, the convenience of those little snack cups – they were the perfect treat for my five-year-old self. I can't remember the last time I ate canned peaches, but I'm thinking I should definitely go ahead and can some for a taste of sunshiny summer in the middle of winter.

The past week I spent a lot of time reading, enjoying the sun, and doing one of what I consider a most indulgent past time – watching movie trailers. Mike and I don't go to the theatres a lot – I prefer cozying up at home and watching in our living room where the snacks are more along the lines of the above pictured spam fried rice onigiri instead of over-buttered, soggy popcorn. But of course, there's something to be said about the movie experience too! How about you guys: movie theatre or living room? And what movies are you looking forward to seeing?

Potato salad. Definitely the salad I make a beeline to at all picnics, barbecues and potlucks. Often I'm disappointed so, to negate that, I'm usually the one bringing potato salad to the party. This is a super quick, super easy fully loaded baked potato salad. I baked the potatoes to get that earthy flavour, but you can go ahead and boil them if that's easier. Potatoes, bacon, cheddar and green onions. I could eat this all. the. time, especially alongside some barbecued jalapeño honey garlic chicken. Happy weekend friends!

Do you guys ever miss high school? Let me clarify – I don't mean the school part of it, or the cliques or classes, I just mean the after school snacks. Man, after school snacks were the bomb. Snacks were, by far, the best part of a weekday. Sometimes my snack situation would be something simple like a giant bag of cheetos (I miss my teenage metabolism and penchant for crunchy styrofoam-y cheese snacks), sometimes it'd be a pack of instant noodles, but by far, the best after school snack was Taiwanese meat sauce.

A couple of weeks ago we had houseguests. One of them wanted to head out for Sunday brunch, but I was feeling entirely too lazy to put on real clothes and head out so the only logical thing to do was to stay in and make waffles. Luckily, I had buttermilk, Greek yogurt and fresh cherries in the fridge. Homemade buttermilk waffles with bourbon cherry sauce and honeyed yogurt and no Sunday brunch line-up equals win-win, in my books.

Happy August guys! I feel like I say this every month, but I just can't believe how fast July has flown by. I'm looking forward to those long, lazy days of the end of summer and dare I say it, maybe even the start of fall? Actually, yes, I'll just go ahead and proclaim my love for fall now. Cozy sweaters, crunchy leaves, cold noses, I love it all! But before I get too ahead of myself, here's what I've been reading, drooling over and loving on the internet.
