I Am... Cadillac Road to Table: Dallas

A couple weeks ago I was invited to Dallas to go to a Saveur Magazine/Cadillac event hosted at Oak. Of course, I jumped at the chance. Usually I'm a down-home kind of girl who spends her Friday nights in, so heading out to a glitzy-glamourous event was a bit of a dream. I threw on a little black dress (festooned with cats, of course), my ankle boots (we were in Texas, after all!) and got to ride in a fancy Cadillac and have dinner at the gorgeous Oak restaurant.

Instead, when I open up my fridge, I'm usually looking at limp, forgotten lettuce and frozen peas. I'm forever heading to the grocery store before cooking. My mom's a huge gardener and she always has been. Even when she was a little kid, she spent her days helping my grandma in the garden. Now, even though she's living in the middle of the city with a concrete patch for a backyard, she's still growing as much as she can. I love going over to pick out fruits and vegetables. It's kind of like having your own personal mini farm. And, as she always likes to remind me, it's all completely organic.

I've been wanting to make a green grilled cheese forever. I mean, yes, I've put brussel sprouts and broccoli in my grilled cheeses, but never have I ever used spinach in a grilled cheese. I Am... Mini Caprese Grilled Cheese Sandwich Recipe

Sometimes in the middle of the night I'll sneak out of bed into the darkened kitchen, open up the fridge and stand in the light of the refrigerator while I contemplate snacks to sate my hunger. Cheese has always got my back – its versatility is second to none. For a treat, I'll melt it between two golden brown buttered crispy pieces of bread. If I want to make it even more indulgent, I'll add sweet juicy tomatoes and fresh basil to bring the whole thing over the top. A caprese grilled cheese is always a good thing in my books.
